DEFITION
Hospital kitchen is a place where meals are prepared and served to patients who are retained in the hospital and therefore expected to provide nitrous and wholesome meals for the patients and hospital staff.
LOCATION
· It should be located in the ground floor directly accessible from the service board to receive daily deliveries e.g. meat, vegetable and dairy products.
· It should be located such that heat and odor are not directed towards areas of high population.
· It should not be located under wards especially of non-ambulant patients as fire safety precaution.
· The direction of prevailing wind must also be considered.
· Direct deliveries to the refrigeration section should be followed to avoid traffic through corridors and cooking area.
